Dong Ding Oolong originates from the Dong Ding Mountain in the Nantou County of Taiwan. Due to the lack of advanced storage methods for tea leaves in early Taiwan, the farmers used fire for further-processing roasting to maintain quality and preservation. Currently, in a broader sense, "Dong Ding" refers to the Dong Ding-style production method, which is the most representative medium-oxidized and medium-roasted oolong tea in Taiwan.
