    The raw material selection for Ruby Green is extremely meticulous. We choose the tender buds of one heart and two leaves, harvested in the morning after the Qingming Festival, the best harvesting season of green tea, when the weather is clear. The standard for harvesting is one bud and one leaf, or one bud and two leaves, just unfolded, to ensure the freshness and tenderness of the tea leaves.The traditional process of green tea production involves harvesting tea buds, then roasting, rolling, and drying. However, we take a different approach to our green tea production process. After harvesting, we let the tea leaves sit in a quiet room for a few hours to increase their aroma. Then, we use a high-temperature and pot-frying method to stop the oxidation of the tea leaves, known as "fixation", which results in a rich flavor, sweet entrance, refreshing mouthfeel, and abundant aroma. This allows green tea to have more possibilities.We adhere to environmentally friendly and sustainable cultivation practices, focusing on producing high-quality green tea using the cultivar TTES. No.18 , also known as Ruby(Hongyu). Our green tea is harvested fresh every day, with the tea leaves only slightly withered and dried to oxidation. We then use a high-temperature short-time roasting method to halt enzymatic activity, preventing oxidation and preserving the tea's natural aroma.
